In this blog, you will step inside a children’s home in Honduras and visit a small farming community in El Salvador to see how simple greenhouses are transforming lives. What were once empty plates are now filled with fresh, nourishing vegetables grown right on-site.
Through NexGenCare’s support and partnership with local communities, children are strengthening their daily diets with fresh produce, families are building food security through year-round harvests, and practical training combined with spiritual encouragement is restoring dignity and hope. Most importantly, you will see how your support through NexGenCare helps turn seeds, soil, and simple tools into life-changing nutrition for vulnerable children and families.
Why Hunger Relief Still Matters
Across Latin America and the Caribbean, many families still struggle to provide nutritious meals each day. Too often, children’s diets consist mainly of starches and lack essential vitamins and minerals needed for healthy growth and development.
Without proper nutrition, children face increased risks of illness, delayed development, and difficulty concentrating in school. In communities affected by poverty, trauma, and limited access to fresh produce, hunger relief and improved nutrition remain urgent priorities.
NexGenCare works alongside trusted local partners to address these challenges at their root. By supporting greenhouse projects where children live and families farm, NexGenCare ensures that fresh vegetables are not occasional extras but reliable staples. These projects combine immediate hunger relief with long-term strategies that build resilience and break cycles of food insecurity.
Feeding Children, Healing Hearts in Honduras
At a donor-supported children’s home in Honduras, boys and girls who have experienced hardship now live in a safe, nurturing environment. Yet even in this loving setting, consistently providing fresh vegetables was once a challenge.
With support from NexGenCare, a greenhouse and irrigation system were installed on the property. What was once a simple plot of land now produces tomatoes, peppers, radishes, and other vegetables that regularly reach the children’s plates.
The children actively participate in the process—preparing soil, planting seeds, watering crops, and harvesting produce. As they watch their food grow, they gain more than better nutrition. They develop teamwork, responsibility, confidence, and practical skills. For many who have endured trauma, the steady rhythm of planting and harvesting offers comfort and healing.
The home’s director shared that the greenhouse is “feeding God’s beloved children,” noting that the agricultural skills the children are learning today will one day help them provide for their own families.
Growing Food and Opportunity in El Salvador
In a rural community in El Salvador, families once faced unstable harvests and limited income, leaving them vulnerable to hunger. To help address these challenges, NexGenCare and local partners supported 12 farmers in building greenhouses equipped with irrigation systems. Farmers also received agricultural supplies, hands-on training, and ongoing technical assistance.
The goal was clear: strengthen food security, promote self-sufficiency, and create sustainable income opportunities.
The results from the first harvest were remarkable. Participating farmers achieved average sales of more than $4,800 and profits exceeding $4,400—an income that surpasses the local minimum monthly salary. With this increased stability, families can afford nutritious food, pay school expenses, and invest in improving their homes.
One farmer shared that his tomato harvest alone generated thousands of dollars in profit while also creating new opportunities for young people in the community—opportunities that had never existed before.
Restoring Dignity Through Skills and Faith
These projects demonstrate that hunger relief is about far more than filling stomachs—it restores dignity and builds lasting hope.
In Honduras, children gain vocational skills, healthy routines, and renewed confidence as they work alongside an agronomist in the greenhouse. Many experience the joy of eating vegetables they helped grow with their own hands.
In El Salvador, farmers receive ongoing technical visits, financial literacy training, and spiritual encouragement that equip them to manage their greenhouses successfully. They learn to track production, costs, and sales, ensuring long-term sustainability. Their testimonies reflect gratitude to God and to generous supporters of NexGenCare who made these opportunities possible. The greenhouses are strengthening the local economy, funding children’s education, and inspiring neighboring families.
